Pomegranates
Pomegranates are in season! You want to wait a few weeks after the first pomegranates begin showing up in the market. Look for a fruit that is heavy and has a deep red skin. The deeper the red, the more ripe the fruit will be.
This tasty fruit is packed with hundreds of edible ruby-red seeds called arils that have a sweet, tart flavor. These juicy seeds can be used as a snack, and add a pop of color to all types of salads (grain, green or fruit) or desserts. The juice is used to make jellies, puddings, desserts, and drinks.
Pomegranates have a long history of being used to subdue inflammation. They are packed full of heart healthy antioxidants. Studies suggest the juice may help lower levels of harmful LDL cholesterol and reduce blood pressure. An 8 oz. serving has 150 calories and is a good source of folate, potassium and vitamin K.
They can be a little tricky to get the seeds out without staining everything you are wearing so try this method to streamline the process and add a new fruit to your day! Cut the pomegranate in half and score the outside of each half four times, barely cutting through the rind. Hold the cut side of one half loosely in your hand, facing down, over a large, wide bowl. Whack the rind with a large spoon and the seeds should fall out through your fingers into the bowl.
