Celebrate the 18th Annual

Ag Day & Tractor Parade.

Mark your calendars and bring your family and friends to the Hayesville Town Square on September 28 for a day filled with fun, food, and festivities. N.C. Cooperative Extension – Clay County and the Clay County Tractor Club are excited to announce the 18th annual Tractor Parade & Ag Day, taking place on September 28 from 10 a.m. to 2 p.m. at the Hayesville Town Square.

Tips for Growing Apple Trees

Have you thought about enhancing your garden or landscape with apple trees? Not only do they produce delicious fruit perfect for baking, canning, selling at farmers markets, or simply enjoying fresh from the tree, but they also offer vital habitat and food sources for wildlife, including birds, bees, butterflies, and other pollinators.

Apples have a long history in the southern US, dating back to the 1600s. Many of the old southern apple varieties, estimated at over 1,800, are now extinct. However, there are some still available that continue to thrive in our hot, humid climate.

Canning Season is Here!

So Easy to Preserve Cookbook

Now that canning season is in full swing, it is very important that you are using the correct process to ensure the food you have canned is of the best quality and will be safe to eat.  If you were unable to attend one of Kim's canning classes, here are some valuable resources that include research based canning practices and tested recipes.  Included in this list is a NEW resource provided by Presto.  They are offering a monthly newsletter that you can sign up for.  The information is included below as well as the July issue.  For more information, contact Kim Terrell, FCS Agent at 828-389-6305 or kvterrel@ncsu.edu.

Salsa Canning Class With Kim Terrell Was a Hands-on Success!

Kim Terrell, FCS Agent, recently taught a water bath canning class at Brasstown Community Center. Participants prepared fresh salsa and then learned the proper steps in preserving it.They learned that high acid foods are the only foods appropriate for water bath canning. And they learned the importance of choosing the proper canning method to ensure a preserved food that is safe and delicious! Extension Master Gardeners of Clay County

Finally, we have had some rain! While that’s 99% good, it does make for more work. It’s been a busy summer for me with not enough time in the garden, so after a walk-about in my own yard, I decided the weeds can wait while I peruse the Master Gardener’s Discovery Garden for some inspiration. Whenever possible it’s a good idea to see a plant that is growing ‘in situ’ before placing it in yours. Something like trying on the dress that looks smashing on the 5’10”, 100 lb. model before handing over the credit card. What a fortunate adventure it was, and I heartily encourage you to take a peek as well!

Send Your Mountain State Fair Entries

by Pony Express

The Pony Express is a free service provided by the NC Mountain State Fair and the North Carolina Cooperative Extension Centers.  The week before the fair, they will be coming to the Clay County Center, to pick up entries for the fair.  The entries will be taken to the fairgrounds, processed and displayed.  Then the week after the fair closes, they will bring the entries back to the Clay County Center.
The entries must be entered online by August 23 and brought to Clay County Center by 11:30 am that day. Make sure to have a printed copy of your entry form.


Non-perishable items need to be wrapped and packaged securely for transport.  The box should be labeled with your name and county, and a copy of your entry form should be included in the box.
